The Laughing Cow: Friend or Foe? You Decide!

As I may have mentioned before, I decided to try out a lower fat recipe for Alfredo sauce that Arthur shared with me. The picture I posted here is the logo for the type of cheese that's used: The Laughing Cow Low Fat Garlic and Herb. The recipe follows:

Laughing Cow Alfredo

Servings 2

3 wedge The Laughing Cow Light Creamy Garlic & Herb
1/2 cup 1% low-fat milk
1 Tbsp reduced fat parmesan cheese
1/2 Tbsp Molly McButter Natural Butter
1/2 tsp garlic powder

Instructions

In a medium-sized saucepan, combine all the ingredients over a low heat,
until everything is melted and the sauce is velvety smooth, about 20
minutes. Serve immediately over hot cooked pasta of your choice.(add
points for pasta used)



Kevin was the first to notice that if you imagine the cow in the logo without ears and with its white nose painted red, it's the spitting image of the DEVIL! (And why does it have earrings made out of packages of cheese? More than a little weird!

I digress.

I cooked the alfredo sauce, but I didn't do it totally low fat because I was scared it would be gross. I used 2% milk, regular butter, and regular parmesan cheese (I just dumped a little in, I don't know how much I used). I served it over eggless egg noodles and threw a little chicken in that I sauteed with some chopped up garlic. (That Oscar Mayer pre-cooked chicken is the way to go!)

Anyway, it was actually really good. Next time I think I'll try the low fat parmesan cheese.

(and by the way, I did drink a Coke yesterday and it was the best Coke I've ever had)

I LOVE Laughing Cow cheese. Try the garlic & herb wedges with Wheat Thins. It's so good it'll make your face melt off. I've only been able to find the plain variety since I moved, so I'm going to have to hit the old neighborhood for the good stuff. I'm glad you posted that recipe, I can't wait to try it.
